Spicy Chicken

This recipe takes only about 30 minutes to make, so it is quick, easy and beyond delicious. It has the right amount of kick when it comes to spice (you can always add more if you’d like). This is the perfect recipe to use when you want to shake things up a bit.

  • Ingredient List:
    • 4 boneless skinless chicken breasts
    • 2 c. hot cooked rice
    • 2 teaspoons chili powder
    • 1/2 teaspoons salt
    • 1/4 teaspoon pepper
    • 1 Tablespoon vegetable oil
    • 1/3 c. salsa
    • 15 oz. black beans, drained
    • 11 oz. whole kernel corn and red plus green peppers, undrained
  • Instructions:

Combine the chili powder, salt and pepper and then rub it into both sides of the chicken. Next cook the chicken in a skillet, about 5 minutes on each side. Add the beans, corn and salsa and cook some more on a simmer for about 5 minutes. Once finished, serve with rice for a complete meal. Enjoy!

  • Ingredient List:
    • 6 boneless chicken breasts
    • 1 c. couscous
    • 1 Tablespoon oil
    • 1 can chicken broth
    • 1 can crushed tomatoes
    • 1 medium onion, chopped
    • 1 can garbanzo beans
    • 2 carrots, chopped
    • 1 zucchini, chopped
    • 2 bay leaves
    • ½ teaspoon cinnamon
    • 1 teaspoon turmeric
    • 1 teaspoon cayenne pepper
    • 3 teaspoons crushed cloves
  • Instructions:

The couscous you use should have directions on how to prepare it, so follow those directions. While that is cooking, cook the onion until it is tender, stir in the bay leaves, cinnamon, turmeric, pepper, and clove. Now put the chicken in the pot and brown. Now add in the broth, garbanzo beans, and tomatoes. Once this begins to boil, reduce heat and let it simmer. After 25 minutes stir in the vegetables and cook for another 10 minutes. Serve over the couscous.

Broccoli and Chicken stir fry is a quick and easy way to spice up dinner once in a while. It is a meal filled with flavor and nutrition that is always a crowd pleaser and provides all the nutrients to create a delicious high fiber meal.

  • Ingredient List:
    • 4 chicken tenders, chopped
    • 1/2 c. water
    • 2 tablespoons soy sauce
    • 1 teaspoon sesame oil
    • 2 tablespoons hoisin sauce
    • 2 tablespoons cooking oil
    • 2 teaspoons cornstarch
    • 1 teaspoon grated fresh ginger
    • 1 lb. broccoli, chopped
    • 1 yellow sweet pepper, sliced into strips
  • Instructions:

First make the sauce by combining the water, soy sauce, cornstarch, sesame oil, ginger and hoisin sauce. Reserve for later. In a medium skillet, cook the broccoli in the oil. Then add in the peppers, once the peppers become crisp, remove from heat. Now, this is when you cook the chicken in the same oil you did the broccoli. Make sure the center is no longer pink. Add in the sauce and allow to get warm, then add the vegetables to the chicken and sauce. Stir everything together until well coated for another minute. Serve with rice or noodles. Works well with vegetable fried millet.
