Beef Stew

  • Ingredient List:
    • 8 oz. beef chuck
    • 2 c. broccoli
    • 1 c. black beans
    • 1 onion, chopped
    • 1 c. lentils
    • 10 baby carrots, chopped
    • ½ c. barley, pearled, raw
    • 12 c. water
    • 2 c. beef broth
    • 1 Tablespoon basil
  • Instructions:

Make sure the beef is cut into small bites, then brown the beef along with the garlic and onions. Now add all the ingredients into a crockpot and allow it to simmer. Or you can use a large pot and bring it to a boil, then reduce heat to a simmer until the vegetables are tender. Serve warm with buttered bread or crackers.

Beef In Tangerine Sauce

There are different cultural recipes one could try with beef. This recipe is one that combines flavors and textures to great a meal that will make your mouth water. It is perfect for those who want something sweet rather than spicy.

  • Ingredient List:
    • 1 pound flank beef steak
    • 1 c. sliced fresh mushrooms
    • 1 large red onion
    • 1 tangerine, seeded
    • 1 package dry lo mein noodles
    • 3 c. cabbage, thinly sliced
    • 1/4 c. dry sherry
    • 1/4 teaspoon ground ginger
    • 1 ½ Tablespoon vegetable oil
    • 1 teaspoon tangerine zest
    • 1/2 small butternut squash
  • Instructions:

Cook the noodles in boiling water. Once done set aside. In a small bowl, combine the hoisin sauce, ginger, sherry and tangerine zest. Then brown the beef in a skillet. Remove and set this aside as well. Then in the same skillet, sauté the squash, mushrooms and onion until crisp. Add the cabbage and cook for another minute. Now stir in the rest of the ingredients you set aside (except the noodles) and cook for another 3 minutes. Serve over noodles (or you could use rice instead).
